🍲 Nigerian Dishes

Jollof Rice +
Jollof Rice

Ingredients:

  • 3 cups long-grain parboiled rice
  • 6 large tomatoes (blended)
  • 4 red bell peppers (blended)
  • 2 onions
  • 3 tbsp tomato paste
  • 2 cups chicken stock
  • 2 tsp curry powder, thyme, and seasoning cubes
  • Salt and vegetable oil

Instructions:

  1. Blend tomatoes, peppers, and 1 onion into a smooth paste.
  2. Heat oil, fry sliced onion and tomato paste for 3 mins.
  3. Add blended mixture, curry, thyme, and seasoning. Cook until sauce thickens.
  4. Add rice and chicken stock, stir, then cover with foil for steaming.
  5. Cook on low heat until rice is soft and smoky. Serve with chicken or plantain.

Fried Rice +
Fried Rice

Ingredients:

  • 3 cups parboiled rice
  • 2 cups mixed vegetables (carrot, peas, sweetcorn)
  • 1 cup diced liver or chicken
  • 1 green bell pepper
  • 1 onion
  • 2 tsp curry powder
  • 2 cups chicken stock
  • Salt, seasoning cubes, and oil

Instructions:

  1. Boil rice with chicken stock until 70% cooked, then set aside.
  2. Sauté onions, liver, and vegetables in oil with curry and seasoning.
  3. Add rice in batches to stir-fry, mixing evenly with vegetables.
  4. Cook on low heat for 10 more minutes. Serve hot with grilled chicken.

Egusi Soup +
Egusi Soup

Ingredients:

  • 2 cups ground melon seeds (egusi)
  • 1 cup palm oil
  • 500g assorted meat (goat, beef, tripe)
  • 2 cups spinach or bitterleaf
  • 2 tbsp ground crayfish
  • 2 scotch bonnets
  • Seasoning cubes and salt

Instructions:

  1. Boil meat with seasoning until tender. Keep stock aside.
  2. Heat palm oil, fry onions and ground egusi paste until crumbly.
  3. Add meat stock, crayfish, pepper, and meat. Simmer 15 mins.
  4. Add leafy vegetables, stir well, and cook 5 mins more.
  5. Serve hot with pounded yam, fufu, or eba.

Suya (Spicy Beef Skewers) +
Suya

Ingredients:

  • 500g beef (thinly sliced)
  • 3 tbsp suya spice mix (yaji)
  • 2 tbsp groundnut oil

  • Pounded yam (prepared separately)

Instructions:

  1. Boil meat with seasoning until soft, keep broth.
  2. Heat palm oil, stir in ground ogbono until slimy.
  3. Add meat stock, crayfish, pepper, and meats.
  4. Simmer for 20 mins, then add vegetables.
  5. Serve hot with pounded yam.

Moi Moi (Steamed Bean Pudding) +
Moi Moi

Ingredients:

  • 2 cups peeled beans (black-eyed peas)
  • 2 red bell peppers

Instructions:

  4. Stir in washed vegetables and cook for 5 mins.
  5. Serve with rice, yam, or amala.

Okra Soup

Ingredients:

  • 3 cups fresh okra (chopped finely)
  • 1/2 cup palm oil
  • 500g assorted meat & fish
  • 2 tbsp crayfish

Instructions:

  1. Boil meat and fish with seasoning until tender.
  2. Add palm oil, crayfish, pepper, and simmer.
  3. Add chopped okra and stir until it becomes slightly slimy.
  4. Cook for 10 mins and serve with fufu or amala.

Afang Soup +
Afang Soup

Ingredients:

  • 2 cups waterleaf
  • 2 cups afang (okazi) leaves (blended)
  • 1 cup palm oil
  • 500g goat meat & stockfish
  • 2 tbsp crayfish
  • 2 scotch bonnets
  • Seasoning cubes, salt

Instructions:

  1. Cook meat and stockfish with seasoning until soft.
  2. Add palm oil, crayfish, and pepper. Simmer for 10 mins.
  3. Add waterleaf first, then afang leaves.
  4. Cook for 10–15 mins more until well combined.
  5. Serve with garri, fufu, or pounded yam.

Nkwobi (Cow Foot Delicacy) +
Nkwobi

Ingredients:

  • 1 kg cow foot (cut into pieces)
  • 1/2 cup palm oil
  • 2 tbsp potash (dissolved in water)
  • 2 tbsp crayfish
  • Utazi leaves (for garnish)
  • Seasoning cubes, salt, pepper

Instructions:

  1. Boil cow foot until very soft with pepper and seasoning.
  2. Mix palm oil with potash water until it forms a yellowish paste.
  3. Add crayfish and cow foot, stir well.
  4. Garnish with utazi leaves and serve warm.

Ofada Rice & Ayamase

Ingredients:

  • 3 cups ofada rice
  • 6 green bell peppers

  • Seasoning cubes, crayfish, iru (locust beans)

Instructions:

  1. Cook ofada rice separately until soft.
  2. Blend peppers and onion, then fry in bleached palm oil.
  3. Add iru, crayfish, meats, and seasoning. Simmer until rich.
  4. Serve sauce over ofada rice.

Beans & Plantain

Ingredients:

  • 3 cups beans (brown or black-eyed)
  • 2 ripe plantains
  • 1 onion

Ingredients:
